About this deal

In Arla Foods, we have a standardised requirement that minimum 90 per cent of the heat used in our pasteurisers should be regenerated, meaning that the process only “uses” 10 per cent of the amount of energy required to bring it up to the pasteurisation temperature. The holding tank has no agitator, and about 50 % of the air content in the cream is naturally eliminated there. Volatile off-flavours are removed at the same time, and the risk of fouling in the pasteurizer is reduced. Holding the cream at about 63 °C in the tank inactivates most lipase enzymes and stops hydrolysis of free fat. The maximum holding time, including filling and emptying, should be about four hours. For longer production runs, two holding tanks should be installed and used alternately, with intermediate cleaning of one tank while the other is in use.

Milk is cooled down with the water from the pipe or collector or with chilled water. Using chilled water also reduces water consumption and cooling time. How is milk pasteurized?

A milk homogenizer working at between 100 to 170 bars splits all the fat globules into very tiny droplets that increase the level of integration of the fat in the milk.
