As soon as the grocery store starts displaying the Easter candy, I bust out my shorts. Well, maybe a few weeks later but I know that spring has sprung….at least in the retail stores. I never have a shortage of candy around my house this time of year either so I’m always looking for fun treats to share with my neighbors and my son’s preschool class. These Cadbury Mini Egg Cupcakes were so much fun to make and, you have to admit, they’re pretty darn cute. Always preheat the oven so you know the cakes are being baked at a constant temperature, and try to use the middle shelf in the oven. Once defrosted, consume within 24 hours, and do not refreeze. I used Cadbury Caramel eggs for this cake. I love caramel and the sweet and slightly softness of the Cadbury eggs really made this cake standout. I also used Cadbury caramel mini eggs in this recipe. You can use regular creme eggs if you like. I just prefer caramel eggs. If you are wanting to make this cake and it’s not easter you can skip the eggs and just use softened caramel pieces. They would make the same texture. Step 2: Once your buttercream is made, but before you colour it, use your spatula to mix and press your buttercream around your mixing bowl for about a minute or so. This smooths out your buttercream, pushing out air bubbles, so giving you a really silky buttercream to work with for your final step. Set aside to cool. After the buttercream has been added around the edges and top of the cake, I add my drip. I use the same drip as on my other mini egg drip cake because it really is perfect. The mixture of dark chocolate, milk chocolate and cream creates the perfect drip texture in my opinion, and you can see how shiny it is from the photos! This cake is super simple to prepare and bake. Plus, the icing and coconut grass are really easy as well! You will need mixing bowls, a bundt cake pan, and measuring utensils.
