This recipe makes 20 Gingerbread Men using a cutter that’s 11cm / 4.5″ tall. I use 3 baking trays because the flow of this recipe works nicely to fill and bake one tray at a time. Not much but just enough to cause a slight reaction with the heat in the oven. This helps achieve a more even bake and texture in your biscuits, and prevent them edging from having a nice bite, to breaking your teeth! You can make the gingerbread dough in advance and keep it in the fridge for a few days. Just make sure to take the dough out the fridge at least 30 minutes before you want to roll it out so that it’s not too hard. Well, I wanted to make gingerbread men. Little Miss Spice had other ideas. She didn't seem to like the idea of making little men and only wanted to use the star, tree and butterfly cutters. Bells were acceptable too. But no little men. Beat the egg and golden syrup together and then stir into the flour mixture. You will get a stiff dough that you can then roll out and cut out whatever biscuit shapes you want. You can get as fancy as you want with your decorations! The way I’ve piped the icing across the arms and waist in a zig-zag is a pretty classic way of decorating Gingerbread Men. Cream the butter and sugar, then add egg and vanilla. You can use a stand mixer or a handheld beater, as I have done; Butter - I usually use unsalted but salted is also fine. It needs to be at room temperature so it is easier to mix in to the flour. When you’re ready to bake, preheat your oven to 375° and line a baking sheet with parchment paper or a silicone baking mat. Pull your dough out of the fridge and let it sit for 5-15 minutes or just however long it will take before you can divide the dough in half
